
I baked these blueberry cheesecakes for my birthday yesterday. Actually I was planning to bake cupcakes but my friend Bambie has been bragging and telling her cousins how good my cheesecake was. In short she convinced me and she took home the remaining 9 pieces.
Bluberry Cheesecake Recipe:
makes 12 regular cupcake size
for the crust:
1/2 cup crushed graham cracker
1 tbsp sugar
3 tbsp melted butter

- Preheat oven to 180 C
- In a medium bowl, mix graham cracker, sugar and butter with fork until well combined.
- Fill each muffin cup with liners with 1 tsp mixture. Press down until frimly packed.
- Bake for 5 minutes.
- Remove from oven and allow to cook.
for the filling:
1 8oz softened cream cheese
1/2 cup nestle all purpose cream
1 egg
1 tsp vanilla
1/4 cup + 2 tbsp sugar
zest of 1 lemon

- In a medium bowl, using electric mixer, beat softened cream cheese and sugar until smooth.
- Beat in cream then add egg, blend in vanilla and lemon zest.
- Spoon mixture into each cup (they will only be half filled).
- Bake at 180 C for 20 minutes.
- Remove from oven and place on rack to cool.
- Top with blueberry filling and refrigerate until ready to serve.
