Mango Panna Cotta - Part 2

Pieter sent me a pack of gelatine sheets 2 months ago and was thinking what to do with it. I have mangoes in the fridge and then I suddenly remembered my very 1st Mango Panna Cotta. Actually I was upset that day but my mind was in creative mode. So I took my martini glasses out of the box and started with my project.

for the mango gelee
1 cup mango puree
1 tbsp of sugar (adjust the sugar as needed)
1 gelatine sheet

  • Soak gelatine sheet into cold water.
  • Meanwhile warm half of the mango puree with the sugar in a medium saucepan over medium heat. remove from heat once the sugar completely dissolved.
  • Squeeze of excess water and add the softened gelatine to the warm mango puree. Add the rest of the mango puree and mix well.
  • Let cool to room temperature then pour the mixture into martini glasses. If you want this effect, tilt the martini glasses then place another glass to support.
  • Let it set in the fridge for about 1 hour.

for the panna cotta check this recipe. I used 2 gelatine sheets.
Makes 2 martini glasses.

How do you get it to sit in the martini glass like that?

1st I made the mango puree. I added gelatine to the mango puree and then I tilt the martini glass until the puree is set. And then I added the cream panna cotta.
